Racks - Still Mediocre


The new Rack's has opened in Subic with much fanfare. Racks has been in the Philippines for more than a decade but the franchise nearly went out of business in recent years. It had dwindled to a single sad outlet in the Ortigas area of Manila. It has now been re-launched with some high-profile outlets in Manila and of course in Subic. I ate at Racks years ago in Manila and found it generally mediocre. It has retained that quality for its new Subic outlet. The steak was undercooked and tough. The ribs are tender enough but they are boiled and bagged. You can see the cook hauling them out of bags from the fridge. These things haven't ever been near a smoker. They are boiled, slathered in sauce and heated up over fire. The service is the usual: smiling and friendly but generally incompetent. The do-nothing manager stands over in the corner and shuffles papers while people wave to get service. I'm struggling to find something positive to say about this place. The ice tea was watery. As usual, napkins are parsed out like they are made of gold (imagine a rib joint that is stingy with napkins!) No soap in the "washing station", and on and on. If you want ribs in Subic, stick to Texas Joes.
